Turkish potato salad

The price of potatoes has been a non stop topic in Turkey for over a week as it reached the hights that locals have never seen before. The vegetable that was considered a cheap staple, turned out to be almost a luxury item for lower income families. We will see what the future brings but I am somewhat happy that I like potatoes only once  in a while. Especially if we are serving potato salad Turkish style.

• Serves: 6-8

What you need

• 6 medium-sized potoatoes;
• 6 pickled green peppers (see the photo);
• 12 green olives;
• 1 handful of dill;
• 1 handful of parsley;
• 1 handful of spring onions.

Dressing:

• 50ml lemon juice;
• 80 ml olive oil;
• salt and black pepper to taste.

What you have to do:

• Boil, cool and peel the potatoes. Cut them into bite size cubes. Slice pickled peppers, cut stoned olives into smaller pieces. Chop dill, parsley and spring onions. Combine everything in a salad bowl.
• Mix olive oil, lemon juice, salt and black pepper. Drizzle the dressing over the potato salad. Mix it well. Taste to correct seasoning, if nescessary add some lemon juice. You have to aim for a pleasantly tart flavor.
