Frozen cream cheese tart with nectarines

This cake I made a few weeks ago when my house was full of guests and it was hot outside. It is still hot but evenings are already getting cooler and windy. So a frozen treat was exactly what we needed. Use the fruit that you have on hand and enjoy them.

• serves 6-8

for the pad:

• 9 large pitted dates;
• 1 cup toasted walnuts;
• 1 cup ground almonds;
• 2 tbsp oil;
• a pinch of salt;
• 1 tsp ground cinnamon.

filling:

• 300g cream cheese;
• 200 ml cream;
• 100 g powdered sugar;
• 1 tbsp vanilla sugar;
• 1 tsp lemon zest;
• 2 tbsp lemon juice.

3 nectarines / a small bunch of grapes or other fruit

What we have to do:

1. In a blender combine dates, walnuts and almonds. Pulse it a few times, then add oil, salt, cinnamon. Pulse the blender until fine crumbles are formed. They should be sticky when touched.
2. Take a tart pan with removable sides, spread with a round sheet of parchment paper. Transfer the crumbles and use your hands to shape the pad.
3. In a bowl whisk the cream until fluffy. Add the cream, powdered sugar, vanilla sugar, lemon zest and juice. Whisk until combined and creamy. Pour the cream into a tart pan. Put the tart into a freezer for 3-4 hours.
4. Before serving, remove the tart from the pan, decorate with nectarines and grapes or any other fruit. Enjoy!
